Coffee cake is traditionally eaten for breakfast (with a cup of coffee of course!), but it makes a great snack any time of day. This tangy, moist coffee cake recipe yields eight servings, making it perfect for a small group or as a pick-me-up for a sick friend. Total time for prepping and baking is about 30 minutes, so this can be whipped up in a flash!
You will need:
• 1 ½ cups tart apples, peeled and thinly sliced
• 1 cup all-purpose flour
• ½ cup buttermilk
• 1/3 cup sugar
• 3 tablespoons brown sugar
• 2 tablespoons butter, softened
• 1 tablespoon lemon juice
• 1 tablespoon sliced almonds
• 1 teaspoon vanilla extract
• ¾ teaspoon apple pie spice
• ½ teaspoon baking soda
• 1/8 teaspoon salt
• 1 egg
• Large saucepan
• Small bowl
• 9-inch springform pan
• Wire rack
• ¼ cup confectioners’ sugar
• 1 teaspoon buttermilk
• ¼ teaspoon vanilla extract

Step 1: In a large saucepan, combine apples, lemon juice, brown sugar, and apple pie spice. Cook this on medium-high heat on the stove, stirring occasionally, for 5 minutes or until it becomes a thick syrup and the apples are tender.
Step 2: In the small bowl, cream the sugar and butter. Beat in the vanilla and egg.
Step 3: Combine the salt, baking soda, and flour. Add this in portions to the creamed mixture, alternating with the ½ cup buttermilk.
Step 4: Spoon the batter into the springform pan. Put the apple mixture on top and sprinkle with sliced almonds.
Step 5: Bake in the oven set to a 350 degree Fahrenheit for 20 to 25 minutes or a toothpick inserted in the center of the cake is clean when removed. Cool the coffee cake on a wire rack.
Step 6: Remove the sides of the pan.
Step 7: Combine the ingredients for the glaze in a small bowl. Drizzle the glaze over the top of the coffee cake.
