I don’t know about you, but when Tiramisu is on the menu, I cannot wait to get through dinner so I can get to dessert! This Italian specialty is absolutely delicious and when it is prepared right, will have your eyes rolling in the back of your head on every bite. Instead of waiting for the next night out, learn how to make Tiramisu yourself and have an incredible treat ready to go in your fridge whenever you want it!
• 1/2c cocoa powder
• 1/2c sugar
• 1.5c espresso, brewed and cooled
• 1t vanilla
• 2t dark rum
• 1# mascarpone cheese
• 6 egg yolks
• 24 lady fingers
Step 1: Add egg yolks, cheese, sugar, and vanilla into a large mixing bowl. Beat ingredients until smooth, fluffy, and creamy. Add 1T of espresso until completely incorporated into the mixture.
Step 2: Add rum to the remaining espresso in a separate bowl and dip ladyfingers into mixture. Soak the cookies on both sides to ensure they are fully saturated with the rum and espresso mixture (Soak them one at a time as you will need another layer. Only use what you need for this layer). Once saturated, place each ladyfinger side by side in a Pyrex dish until the bottom of the dish is completely covered with the cookies. If you need to break some of the ladyfingers to cover the entire base, that is perfectly fine.
Step 3: Once the bottom of the dish is covered, add half of the cheese mixture over top of them. Smooth it out so it is evenly spread throughout the dish. Then, sprinkle half the cocoa powder across the top.
Step 4: Add a second layer of saturated ladyfingers and then add the remaining cheese mixture, smoothing it out on top. Cover the dish with plastic wrap and place in refrigerator overnight. If you are in a pinch, you can take the next step in about two hours, but overnight will allow the flavors to come together better.
Step 5: Remove the dish from the refrigerator and remove the plastic wrap. Sprinkle the remaining cocoa powder on top of the cheese mixture. Now, your Tiramisu is ready to serve! Traditionally, it is cut into square pieces.
