When it is time for comfort food, few things hit the spot like fried chicken. Homemade fried chicken is so much better than what is offered in the grocery store or a fast food restaurant. This recipe requires only a few ingredients and takes less than thirty minutes to prepare. It will make of four servings, the entire family can dig in and enjoy!
You will need:
• 1 chicken weighing 1 to 2 ½ pounds, cut into pieces
• 3 eggs
• 2 cups self-rising flour
• 1 cup red pepper hot sauce
• 1/3 cup water
• 1 teaspoon pepper
• Oil (peanut preferred) for frying
• 2 medium sized bowls
• Deep pot
• Food thermometer
• 1 cup salt
• ¼ cup garlic powder
• ¼ cup black pepper
• Small bowl
Step 1: Mix seasoning ingredients together in a small bowl. Seasoning not used in the fried chicken recipe can be stored for up to six months in an airtight container.
Step 2: In medium bowl, beat water and eggs. Add hot sauce until the egg mixture looks bright orange.
Step 3: Combine pepper and flour in another medium bowl.
Step 4: Wash chicken, pat it dry, and apply the seasoning to all sides of each piece.
Step 5: Dip seasoned chicken into the egg mixture, then coat it well with the flour mixture.
Step 6: Fill a deep pot no more than halfway with oil. Heat the pot on the stove until the oil reaches 350 degrees Fahrenheit.
Step 7: Fry chicken in the heated oil until it is crisp and brown. It takes longer to fry dark meat than white meat. White meat should be fully cooked in about 8 to 10 minutes, while dark meat will take about 13 to 14 minutes.
