It is down to the wire for the 4th of July menu planning and you may be fresh out of ideas. Don’t worry, because we have an easy and delicious recipe for stuffed sausage sliders that requires only 40 minutes of preparation time, ten minutes of grilling time, and makes 16 servings. Guests will think you spent all day long in the kitchen!
For Stuffed Sausage Sliders, you will need:
• 2 pounds ground pork
• ½ to ¾ cup (2 to 3 ounces) smoked provolone or white cheddar cheese, shredded
• 3 tablespoons olive oil
• 1 ½ teaspoons black pepper
• 1 small apple
• 1 teaspoon crushed fennel seeds
• 3 garlic cloves, minced
• ¾ teaspoon salt
• ¼ to ½ teaspoon dried and crushed sage or thyme
• 1/8 teaspoon whole nutmeg, grated
• 16 two-inch buns, biscuits, or rolls, sliced almost in half
• Large bowl
• Mixing spoon
• Baking sheet
• Plastic wrap
• Meat thermometer
• Grilled Apple & Fennel Slaw
Step 1: Peel the apple and shred enough to yield 1/3 cup. Combine the apple, garlic, oil, fennel seeds, pepper, salt, nutmeg, and thyme in the bowl. Add the ground pork and use the mixing spoon to mix well.
Step 2: Shape ¼ cup of the mixture to form a ball. Make an indentation in the top with your finger. Fill it with 1 to 2 teaspoons of cheese. Press the pork mixture over the indentation to enclose the filling. Reshape the mixture into a ball. Flatten it to create a patty with a 2 ½-inch diameter. Place the patty on the baking sheet.
Step 3: Repeat Step 2 for the rest of the pork mixture and the cheese. Cover the baking sheet with plastic wrap and refrigerate for between 1 and 4 hours.
Step 4: Grill the patties directly on medium heat until the meat thermometer inserted in the center measures 160 degrees Fahrenheit, approximately 10 to 12 minutes. Turn patties once halfway through the grilling time.
Step 5: Place a slider into each bun and top with the Grilled Apple & Fennel Slaw, prepared below.
For Grilled Apple & Fennel Slaw, you will need:
• 1 small bulb fennel
• 1 tart apple, peeled
• 2 tablespoons balsamic or sherry vinegar
• 1 tablespoon butter
• 1 teaspoon brown sugar, packed
• Dash cayenne pepper
• Dash salt
• 36×18-inch sheet heavy aluminum foil
Step 1: Fold the foil in half to create an 18-inch square.
Step 2: Shred the apple coarsely. Cut the fennel into bite-sized, thin strips. Put the fennel and apple into the center of the foil.
Step 3: Top fennel and apple with butter, salt, vinegar, cayenne pepper, and brown sugar. Bring up two of the opposite edges of foil and use a double fold to seal them. Fold the remaining ends of the foil, enclosing the apple mixture completely but providing space for steam buildup.
Step 4: Grill the packet with the sliders until the fennel becomes tender, approximately 10 to 12 minutes.
