S’mores are a traditional camping favorite and this recipe converts them into an even tastier brownie dessert perfect for any season or reason. They are easy to make, so even the kids can get involved with combining the ingredients! In just one hour, you will have twelve two-inch, melt in your mouth brownies, and you won’t have to have a campfire to make them!
You will need:
• 1 stick (8 tablespoons) unsalted butter
• 4 large eggs, cold
• 1 cup all-purpose flour
• 1 cup light brown sugar, packed
• ¾ cup granulated sugar
• 4 ounces unsweetened chocolate, chopped
• 1 ½ teaspoons pure vanilla extract
• ½ teaspoon salt
• 8×8-inch baking pan
• Microwave-safe medium bowl
• Hand mixer
• 4 cups large marshmallows
Step 1: Place oven rack in lower third of oven. Heat the oven to 325 degrees Fahrenheit. Line the baking pan with foil, allowing the foil to hang over the edges by one inch.
Step 2: Use some of the melted butter for the crust to butter the foil. Combine the rest of the butter with the salt, sugar, and graham cracker crumbs in the bowl, stirring ingredients together. Press this mixture evenly into the bottom of the pan. Bake about 20 minutes or until gold brown.
Step 3: Make the brownies by placing the chocolate and butter into the microwave-safe bowl. Microwave for 2 minutes on 75 percent power. Stir, then microwave about 2 minutes longer or until completely melted.
Step 4: Stir the brown and granulated sugar, salt, and vanilla into the chocolate.
Step 5: Add the eggs, beating the batter vigorously with the hand mixer until it is glossy and thick.
Step 6: Add the flour, stirring until it is just incorporated.
Step 7: Pour the batter into the pan. Bake until a toothpick placed in the middle comes out clean with several crumbs and the top appears crispy (approximately 40 to 45 minutes).
Step 8: Remove pan from the oven. Position oven rack approximately 6 inches from broiler and preheat the broiler on low.
Step 9: Layer the marshmallows across the top of the brownies and broil them about 2 minutes or until they are golden.
Step 10: Cool the brownies on a wire rack. Use the foil flaps to gently remove the brownies from the pan. Fold away the foil, carefully separating the marshmallow from the foil. Cut brownies into squares.
