Cutting calories and fat intake by making a few substitutions in a traditional orange cake recipe makes this dessert so much healthier. You will need:
• ¾ cup unbleached flour, sifted
• 12 egg whites, room temperature
• ½ cup whole-wheat pastry flour, sifted
• 2 cups orange sections
• 1 cup sweet cherries, pitted
• ½ cup honey
• 1 ½ teaspoons orange extract
• 1 teaspoon cream of tartar
• Small bowl
• 5 to 6-quart bowl
• 9 or 10-inch tube pan with removable bottom
• Large spatula
• Baking spoon
• Wire rack
• Thin knife
For orange cream:
• 1 cup nonfat vanilla yogurt
• 1 cup nonfat cottage cheese
• ½ cup orange juice concentrate
• Small bowl
• Food processor
Step 1: Make orange cream by pureeing cottage cheese in the food processor approximately 4 minutes or until completely smooth, stopping frequently to scrap the sides of the container. Transfer this to a small bowl and lightly whisk in the orange juice and yogurt. Chill.
Step 2: Begin making the cake by sifting the pastry flour and unbleached flour together. Return the flour mixture to the sifter.
Step 3: Beat egg whites in a 5 to 6-quart bowl until they are bubbly.
Step 4: Add the orange extract and cream of tartar. Beat this mixture on medium speed until soft peaks are formed.
Step 5: Gradually beat in honey until egg whites become stiff.
Step 6: Sift approximately ½ cup of flour over the egg whites and use the large spatula to carefully fold it into the batter. Repeat this process until all the flour is incorporated.
Step 7: Spoon the batter into the ungreased tube pan. Use the spatula to level the top.
Step 8: Bake for 40 to 50 minutes in a 325 degree Fahrenheit oven, or until the top becomes gold and springs back when it is touched lightly. Invert the pan on a wire rack. Allow the cake to cool for one hour.
Step 9: Remove the cake from the pan by running the knife around its outside edges. Remove the outer part of the pan.
Step 10: Run the knife around the bottom of the cake and the center tube.
Step 11: Slice the cake. Serve it with the cherries, oranges, and orange cream and enjoy eating it!
