- 1 T. cooking oil
- 1 eye of round beef roast ( about 2-1/2lb)
- 1 med onion, chopped
- 1 c. brewed coffee
- 1 c. water, divided
- 1 beef bouillon cube
- 2 tsp. dried basil
- 1 tsp. dried rosemary
- 1 garlic clove, minced
- 1 tsp. salt
- ½ tsp. pepper
- ¼ c. all-purpose flour
Step One: Heat the oil in a Dutch oven and brown your beef roast on all four sides.
Step Two: As the beef roast is browning add in your chopped onion and cook until the onion is transparent.
Step Three: Now that you have you beef roast brown and your onions cooked it is time to add in your coffee, 3/4 c. of water, bouillon, basil,rosemary,garlic, salt, and pepper. Now that we have that done it’s time to cover that and let it set and simmer for about 2-1/2 hours or until the meat is tender.
Step Four: Now it is time to make the gravy for your roast. After you have the beef roast out of the pan its time to mix the flour and the remaining water into a bowl until it is smooth and free of lumps. Now stir the flour and water into your pan with the juices left over from the beef roast.
Step Five: Cook the flour and juices until bubbly and thick. ( some people like to add the beef roast back in the pan to let the gravy get on the meat)
Now that we have that all done it is time to eat! Don’t forget to serve the gravy with the beef roast. This recipe will feed about 7 hungry people.
