Wouldn’t it be nice to have pizza that was considered “heart healthy” instead of knowing you are going to have to run an extra mile or get on the bike for an extra hour just to enjoy your favorite food? Well, here it is! We found a delicious pizzette recipe on the Food Network.from Giada De Laurenitis that offers the great taste of gourmet pizza and is actually heart healthy!
3 T olive oil
1 t kosher salt
3 onions, white (large)
1 t fresh cracked black pepper
1 t mixed herbs (dried)
1 t sugar
12-16 ounces of pre-made pizza dough
3 oz crumbled goat cheese
5 slices of prosciutto (cut into small 2″ squares)
Parsley (for garnish)
You will also need a small 2 ½” cookie cutter
Heat oil in a large skillet over low heat. When oil has come to temperature, add salt, pepper, herbs, sugar, and onions. Mix ingredients together with wooden spoon to combine and continue to sauté. Allow mixture to cook, stirring occasionally, until onions have become caramelized. This will take about 45 minutes to one hour. As onions are completing, preheat your oven to 475 degrees Fahrenheit.
Roll pizza dough to ¼” thickness. Use cookie cutter to cut out small circles (two dozen). Place circles on baking sheet. Place a small dollop of the caramelized onions on each piece, top with crumbed goat cheese, and then place pan in oven for about ten minutes (cheese should be completely melted).
Remove pizzettes from oven and immediately top with small square of prosciutto. Garnish with parsley and serve immediately.
