It can be difficult to find a recipe that makes healthy results that also taste great. If you have leftover pumpkin from the Halloween Jack-O-Lantern or Thanksgiving pie, use it in this quick and easy recipe for pumpkin ravioli that makes six servings of four ravioli and contains just 162 calories and five grams of fat per serving.
You will need:
• 1 cup leftover or canned pumpkin
• 24 wonton wrappers
• ½ cup chicken broth
• 1/3 cup parmesan cheese, grated
• 1 ½ tablespoons unsalted butter
• 1 teaspoon plus ¼ teaspoon salt
• 1/8 teaspoon pepper
• Parsley, chopped (optional)
Step 1: In a medium-sized bowl, combine the pumpkin, parmesan cheese, pepper, and ¼ teaspoon salt, stirring until ingredients are well-blended.
Step 2: Fill a large saucepan ¾ full with water, add 1 teaspoon of salt, cover, and bring water to a boil. In the meantime, open the wonton wrappers on a flat surface, placing them in a single layer. Spoon approximately 2 teaspoons of the pumpkin mixture into the center of each wrapper.
Step 3: Use some water to moisten the edges of the wrappers. Bring together two opposite sides to create a triangle and pinch the edges together to seal them.
Step 4: Remove the cover from the saucepan of boiling water and place the ravioli in the water. Cook for seven minutes, remove ravioli, and place them in a colander to drain off water.
Step 5: Put the butter and chicken broth into a medium saucepan and bring these ingredients to boiling on a burner.
Step 6: Add the cooked ravioli to the saucepan and toss them to coat with the broth mixture.
Step 7: Remove ravioli from the broth and place them on individual plates. Ladle some broth over top of the ravioli and sprinkle on chopped parsley, if desired, before serving.
