For Watermelon Martinis, you will need:
Step 1: Put the watermelon cubes into the blender, cover, and blend until smooth. Pour this puree into the pitcher and keep cold, freezing it a short time so it becomes icy.
Step 2: For every two martinis, combine ¼ cup lemon vodka, 1 cup watermelon puree, 2 tablespoons lime juice, between 3 and 6 ice cubes, and 1 tablespoon each of sugar and Cointreau in blender. Cover and blend until mixture is slushy, then pour into serving glasses.
For a June Bug, you will need:
• 3 scoops orange sherbet
• 3 cups ginger ale
• 4 tablespoons orange juice
• 4 tablespoons grenadine
Blend the ingredients in a covered blender and pour into cocktail glasses filled with ice.
For Sparkling Peach Punch, you will need:
• 29-ounce can of peach slices in light syrup
• 3 cups water
• Eight 10-ounce bottles of club soda or ginger ale
• 1 ½ cups sugar
• Four 11.3-ounce cans of peach nectar
• 3-ounce package of peach flavor gelatin
• ½ cup lemon juice
• Mixing spoon
• Large fork
• Extra-large bowl
• Four 1-quart containers with covers
• Large saucepan
• Jug or punch bowl
Step 1: Combine the gelatin, sugar, and water in the saucepan and heat on stove until boiling, stirring with the mixing spoon to dissolve.
Step 2: Place the peaches (undrained) into your blender, cover, and blend until smooth. Combine the pureed peaches, gelatin mixture, lemon juice, and peach nectar in the bowl. Divide this mixture into the 1-quart containers, cover the containers, and freeze them until firm or overnight.
Step 3: When ready to serve, remove the containers from the freezer and allow them to thaw for 1 hour at room temperature. Use the fork to break into chunks and place these into a jug or punch bowl.
Step 4: Stir in 2 bottles of the club soda or ginger ale for every container of peach mixture you are preparing. Continue stirring until mixture is slushy, then serve.
