If you are looking for a fast, hearty meal that the entire family will enjoy, look no further than this barbecue beef sandwich recipe. It yields eight servings and takes only 25 minutes to prepare. While it is cooking, you can spend time doing other things to work up your appetite. This is the perfect fall or winter meal for a busy family.
You will need:
• 1 pound of beef round steak, cut into ¾ inch-thick pieces
• 1 large carrot, chopped
• 1 large onion, chopped
• 1 14.5-ounce can of tomatoes, cut up
• 2 tablespoons vinegar
• 2 tablespoons Worcestershire sauce
• 1 tablespoon brown sugar
• 1 garlic clove, minced
• 2 teaspoons chili powder
• 1 bay leaf
• 1 teaspoon crushed, dried oregano
• 8 hamburger buns
• Dutch oven
• Nonstick cooking spray
Step 1: Trim the fat off the meat and cut meat into 4 to 6 pieces, each ¾-inch thick. Coat the interior of the Dutch oven with the nonstick cooking spray.
Step 2: Add half of the pieces of meat to the Dutch oven and brown them on both sides. Remove them from the pan and repeat the process with the other half of the pieces. Drain away all fat and return all of the meat to the Dutch oven.
Step 3: Add the carrot, onion, undrained cut tomatoes, vinegar, Worcestershire sauce, chili powder, brown sugar, garlic, oregano, and the bay leaf to the Dutch oven. Bring ingredients to boiling and then reduce heat. Cover the Dutch oven and simmer ingredients for between 2 and 2 ½ hours or until the meat is extremely tender.
Step 4: Remove the meat from the sauce and shred it. Simmer the sauce for 5 to 10 minutes or until it has thickened slightly, with the Dutch oven uncovered. Discard the bay leaf and stir the meat into the sauce, heating it through.
Step 5: Open the hamburger buns and add some meat and sauce to the bottom of each bun. Top meat in each bun with a serving of remaining sauce. Put the top bun on top of the meat and serve.
Tips: The meat can be stored in single, double, or 4-serving containers in the freezer for as long as 6 months. To reheat it, transfer it to a saucepan, add 1 tablespoon of water, and cook on low heat until mixture is heated through, occasionally stirring. For one or two servings, cook approximately 8 to 10 minutes and for four servings, cook approximately 25 to 30 minutes.
