Christmas morning is often a flurry of activity due to excited children and for many, holiday travel. Sometimes eating is the last thing on the family’s mind, but having a hearty breakfast keeps energy levels high throughout the busy day. Here is a Christmas breakfast recipe that makes 12 servings and can actually be prepared the night before and baked while you are showering, just before the kids wake up to see what Santa delivered. With this delicious breakfast you will have the energy you need to help the kids open their gifts and play with their toys!
You will need:
- One-pound loaf of cinnamon raisin bread (see Variation below or cube)
- 1 cup apples, diced and peeled
- 1 8-ounce bar of cream cheese, diced
- 8 eggs
- 6 tablespoons butter, melted
- 2 ½ cups of half-and-half cream
- ¼ cup maple syrup
- Extra raisins (optional)
- 9×13 inch baking dish
- Large bowl
- Cooking spray
- Plastic wrap
Step 1: Using the cooking spray, coat the inside bottom and sides of the baking dish. Place ½ of the bread cubes into the bottom of this dish.
Step 2: Evenly sprinkle diced cream cheese over the bread cubes. Top it with the apples. If you opted for extra raisins, sprinkle these on top and then top them with the remaining bread.
Step 3: Beat the eggs, butter, cream, and maple syrup in the large bowl. Pour this liquid over the bread in the baking dish.
Step 4: Cover the dish with plastic wrap. Press down on the plastic wrap so that all of the pieces of bread become soaked.
Step 5: Refrigerate for a minimum of 2 hours.
Step 6: Preheat oven to 325 degrees Fahrenheit.
Step 7: Place baking dish in oven and bake for 45 minutes. Allow the dish to stand for ten minutes before serving. Serve with extra maple syrup.
Variation: Spread the cream cheese on the slices of bread at then cube the bread.
