If you’re like me, you get tired of eating the same old thing day after day for breakfast. Oatmeal, cereal, bagel… when does the monotony end? For most of us, it is more about the time to make a real breakfast, something that will fill you up and last longer than an hour, than it is in satisfying our need to have something delicious. Well, here is a recipe for a breakfast burrito that will knock your socks off, fill you up, and will only take a few minutes to make.
½ c egg whites (buy the egg whites in the carton, it will save you time)
2 strips of bacon (cut into small pieces)
2 T onion & jalapeno pepper mix (diced finely)
1/4c tomato (diced finely)
¼ c shredded cheese (use your favorite, I prefer the taco blend)
1 t crushed garlic
Preheat skillet so the pan is warm. When skillet is hot, add bacon to the pan and sauté until crispy. Drain off most of excess bacon fat, leaving just enough to sauté garlic, onion, and jalapeno mixture. Sauté all ingredients together for about 30 seconds and then spread throughout the skillet. Pour in egg whites and allow to cook for about 20 seconds in the pan. Rotate skilled around so uncooked eggs are moving throughout and covering the pan. When eggs are almost done, about 90 seconds, add tomato and quickly scramble the mixture. Remove from heat.
Lay out your wrap and place cheese in a long line towards one of the ends. Add egg mixture and a dash of hot sauce. Fold wrap and then enjoy your breakfast!
