If you do not eat meat, or are trying to cut back on your consumption of meat for health reasons, you do not need to feel left out when it comes to the holiday dinner. There are lots of main holiday dishes that do not use meat as an ingredient. Here is one that takes only 25 minutes to prepare and serves eight people.
You will need:
- 1/3 cup dried plain breadcrumbs
- 5 cups packed spinach (5 ounces), washed and trimmed
- ¾ cup plus 2 tablespoons whole milk
- ½ cup Gruyere cheese, grated
- 2 tablespoons unsalted butter, plus additional for the baking dish
- 2 tablespoons all-purpose flour
- 2 tablespoons of water
- 2 large eggs, separated plus 2 additional large egg whites
- Ground pepper
- Coarse salt
- 1-quart round baking dish with tall sides
- Large skillet
- Medium saucepan
- 2 Large bowls
- Electric mixer
Step 1: Preheat oven to 375 degrees Fahrenheit.
Step 2: Butter the inside of the baking dish. Dust it with breadcrumbs, then set it aside.
Step 3: Heat water in a large skillet on medium-high heat on the stove. Add the spinach and cook it, stirring constantly, until it is wilted (approximately 4 minutes). Transfer the spinach to a strainer to cool and press to release the liquid.
Step 4: Melt the butter in the medium saucepan over medium heat until it bubbles. Add the flour and whisk ingredients until a paste is formed. Continue to cook for 2 to 3 minutes or until pale blonde in color. Gradually add milk while whisking.
Step 5: While whisking, cook until the lumps are gone and the mixture has thickened (approximately 3 to 5 minutes). Remove from heat.
Step 6: Sir in the cheese until it is melted. Season with salt and pepper. Transfer this soufflé base to a large bowl.
Step 7: Pulse egg yolks and spinach in a food processor until they are coarsely pureed. Add ¼ cup of soufflé base and pulse until blended.
Step 8: Stir the spinach mixture into the remaining soufflé base.
Step 9: Place a salt pinch and 4 egg whites into the large bowl and beat with the electric mixer on medium-high until stiff peaks form, approximately 3 minutes.
Step 10: In 2 additions, gently fold the egg whites into the soufflé base.
Step 11: Pour the batter into the prepared dish. Bake until soufflé is browned, tall, and firm when touched, approximately 35 minutes. Do not open the oven during the first 25 minutes of baking. Serve immediately.
